Recipe: Detoxifying Beet and Carrot Salad

This vibrant beet and carrot salad is rich in antioxidants, fibre, and nutrients that support liver detoxification. Beets contain betalains, compounds that aid in liver detoxification processes, while carrots provide beta-carotene and other vitamins essential for liver health. Enjoy this delicious and detoxifying salad as part of your balanced detox regimen.



INGREDIENTS:

 

  • 2 medium-sized beets, peeled and grated

  • 2 large carrots, peeled and grated

  • 1/4 cup fresh parsley, chopped

  • 1/4 cup raw pumpkin seeds

  • 2 tablespoons apple cider vinegar

  • 1 tablespoon extra-virgin olive oil

  • 1 tablespoon freshly squeezed lemon juice

  • 1 teaspoon raw honey or maple syrup (optional)

  • Salt and pepper to taste


METHOD:

 

  • In a large mixing bowl, combine grated beets, grated carrots, chopped parsley, and raw pumpkin seeds.

  • In a small bowl, whisk together apple cider vinegar, extra virgin olive oil, lemon juice, and raw honey or maple syrup (if using). Season with salt and pepper to taste.

  • Pour the dressing over the salad ingredients and toss until well combined.

  • Allow the salad to marinate in the refrigerator for at least 30 minutes before serving to enhance the flavours.

  • Serve chilled as a refreshing side dish or light meal.
